The Epicure Food Festival is a very prestigious food event which takes place every year at the Dolder Grand Hotel in Zurich. This year we were invited to a food pairing Master Class run by Luana Cabezas. It involved tasting the luxury cognac, LOUIS XIII, in conjunction with delicacies prepared by the the Dolder’s Fine Dining Chef Heiko Nieder, which were designed to complement the complex tastes of this very special premium brandy.

The event took place in the very luxurious surroundings of the Library Suite at the hotel. After a warm welcome from General Manager of the Dolder Grand, Marcus Granelli, the food and cognac pairing began.

We began by learning a little about the history of the cognac. Produced by Rémy Martin in Cognac, France, this Cognac is a tribute to King Louis XIII who was the reigning monarch when the Rémy Martin family settled in the Cognac area of France. What is even more significant, is that Louis XIII was the first monarch to recognise cognac as a specific category of eaux-de-vie.

Produced in the Grande Champagne region of Cognac the final blend of LOUIS XIII is made from around 1,200 individual eaux-de-vie, which vary in age from 40 to 100 years. The complexity of the cognac is amazing and you can taste so many different flavours from dates to vanilla to leather and lots, lots more. Luana encouraged us to use our imagination to see what tastes and smells we could derive simply by sniffing the cognac, before we actually tasted it.

Luana guided us through the tasting and we enjoyed matching the flavours of the cognac to the very wonderful finger food provided by Heiko Nieder.

The LOUIS XIII crystal decanters are a work of art in their own right. Hand blown and each the work of 11 craftsmen they owe their inspiration to a simple flask lost on a French battlefield over four centuries ago. The crystal decanter reflects the luxurious qualities of LOUIS XIII.

It was a wonderful event and gave us a great insight into what is involved in the making of a premium cognac and the fact that it takes so many, many years before a Louis XIII cognac is ready to be enjoyed. As they say at Louis XIII “Each decanter is the life achievement of generations of Cellar Masters” and certainly, a premium cognac is something that takes years in the making.
