Behind the Scenes Chocolate Bunny Making at Honold’s
Around Easter time all the shop windows in Zurich are bursting with chocolate bunnies and eggs. In fact there always seem to be more bunnies than you could possibly imagine the population of Zurich would be able to devour! However, as Easter Sunday approaches, you can be sure that all those bunnies and eggs will find an owner!
Confiserie Honold were running tours this year of their Easter bunny making facilities at their atelier in Küsnacht so we were delighted to book a couple of spaces and enjoy an afternoon watching the bunnies being made. The tours were open to the public and were also free of charge.
Furthermore, not only did you get to see the chocolate bunnies being made, but also Honold’s speciality Easter cakes too!
After donning white coats and fetching hats and scrubbing washing our hands thoroughly we were all set.
We began by taking a look at the Easter tarts being made. We watched as the freshly beaten egg white was added to the main mixture and then after being thoroughly folded in, was piped into the pastry tartlets which contained raisins. Once filled, the tarts were placed in the oven and we moved on to the chocolate bunny area.
Maître Chocolatier Ivo Judd, showed us the different types of moulds used for the varying types of bunny and then we watched as the chocolate was painted onto the mould in different coats, so as to have the eyes, nose and ears and all the markings outlined. Each one is an individual!
It’s very much a labour of love to get these totally hand made bunnies ready and decorated for Easter!
Some of the bunnies were hollow, but some were filled with liquid chocolate from a molten chocolate fountain. The children on the tour delighted in watching the liquid chocolate and were given a very special tasting all of their own!
After watching the bunnies being created, we then visited the packing area where the bunnies and eggs got the final touches before being packed and we got to taste the final product!
Just as we were leaving the freshly baked cakes were ready and we were given a little package of these Easter specialities to take home. A wonderfully sweet end to a perfect afternoon!
