Avocado Sweet Potato Salad with Ginger Dressing
Ingredients for Salad:
- 400g Sweet Potatoes
- 2 medium-sized Avocados, diced
- 100g Pomegranate Seeds
- 90g Hazelnuts, roughly chopped
- Some Chili, sliced thinly
- A handful of fresh Basil, sliced into strips
- Microgreens, for garnish
- Salt
Ingredients for Sauce
- 8 tablespoons Lime Juice
- 3 teaspoons White Balsamic Vinegar
- 1/2 teaspoon Grated Ginger (adjust based on ginger’s intensity)
- 5 tablespoons Olive Oil
- Salt
Method:
- Peel sweet potatoes, cut them into rough cubes, and steam them in salted water
- They should be cooked but not overly soft
- Mix the cooked sweet potatoes with all the other salad ingredients, except for the micgrogreens
- Now combine all the ingredients for the dressing in a small bowl. Finally, mix the dressing and season the mixture with salt. Serve garnished with microgreens.
