Banana Bread


This is my daughter’s favourite recipe for Banana Bread.It’s tasty, easy to make and a great way to use up the bananas in the fruit bowl which have started turning dark brown!


  • 145g (5oz) plain flour
  • 1/2 tsp soda bicarb
  • ½ tsp salt
  • 55g (2oz) butter
  • 110g (4oz) sugar
  • 1 free-range egg
  • 2 mashed ripe bananas
  • 42ml (1.5oz) milk mixed with 3/4tsp lemon juice (or vinegar)
  • ½ tsp vanilla extract
  • 2 x oblong baking tins and 2 x greaseproof tin liners – or just use greaseproof paper

  • Set the oven to 180C/350F/Gas 4.
  • Cream the butter and sugar together until light and fluffy with a electric whisk if you have one.
  • Mix in the mashed bananas, milk, egg and vanilla extract and stir well.
  • Sift the flour, soda bicarb and salt into a bowl then fold into the rest of the mixture.
  • Pour the cake mixture into two oblong tins and bake in the overn for between 15 and 30 minutes according to your oven (my oven takes 20 minutes).
  • Check that the cake is cooked through by using a wire skewer and leave to cool on a wire rack.Enjoy!
