Beetroot Hummus

Easy to make, delicious and such a beautiful colour, Beetroot Hummus is a fabulous addition to any party. You can spread it on pita bread, use it as a vegetable dip, or make into a sandwich spread. What’s more, it take just 10 minutes from start to finish!


  •  2 x cooked beetroots (peeled and chopped into quarters or eighths)
  • 1 x 15-oz. can cooked chickpeas drained and rinsed
  • Zest of 1 lemon
  • Juice of 1/2 large lemon
  • Pinch of salt and several grinds of black pepper
  • 2 large cloves garlic minced or finely grated
  • 2 heaped tablespoons tahini
  • 1/4 cup extra virgin olive oil


  1. Place all ingredients in a mixer and process.
  2. If the mixture is too thick add a tablespoon of water.
  3. Place in dipping dishes and serve with vegetable sticks, pita bread or crackers or spread on toast with rucola or avocado.

Beetroot Hummus with Cumin or with Chilli

You may also like to try adding 1/2 teaspoon ground cumin powder, for a more earthy taste – or maybe 1/2 teaspoon chilli for a bit of a kick.
