Crustless Broccoli, Cheese & Onion Quiche

(Vegetarian)

Crustless Broccoli, Cheese and Onion Quiche

Ingredients

  • A little butter and a little olive oil
  • 500g fresh or frozen broccoli
  • 5 large or 6  medium eggs
  • 1/2 cup single cream
  • 1 – 2 cloves garlic chopped
  • 1 small – med onion chopped
  • 1 cup grated cheese (I use mix of Cheddar & Gruyere but feel to choose)

Method

1. Preheat oven to 200 degrees celsius.
2. Butter a 9-inch ovenproof pie dish.
3. Cook the frozen broccoli (or use fresh if you have) then chop.
4.Whilst the broccoli is cooking fry the chopped onion and garlic in a little oil.
5. If you have other vegetables you would like to add such as mushrooms, peppers etc, add them to the mix and fry too.
6. Whisk the eggs and cream together. Add salt, pepper, (optionally a few grinds of chilli) and stir in the cheese. Place a little finely grated cheese on top of the mixture.
7. Place the mixture into the prepared pie dish and bake in the oven until golden brown for approximately 30minutes. Check it is cooked by making sure that a knife inserted in centre comes out clean.
8. Cut into slices and serve with salad.
Tip: Use any other vegetables to ring the changes.  Make sure to use plenty of salt and pepper to season.
This recipe is vegetarian and low carb.
