Easy Nutella Cookies
This recipe was given me by a friend last week and is SO easy to make! Using just 3 and a half ingredients (if you include vanilla essence as a half!) the cookies take about 15 minutes to make and between 8 and 12 minutes to bake depending on the size you make and your oven.
1 cup of Nutella
(plus a couple of tablespoons extra of Nutella which you need to put in the fridge (or in the freezer for a very short time) to get really cold
I cup plain flour
1 tsp vanilla essence
1. Put the oven on at 180 degrees Celsius. In a bowl lightly beat the egg and add the cup of Nutella and beat the two together.
2. Add the vanilla essence. Sieve the flour into the same bowl and mix together very thoroughly until you have one big ball of dough that is totally mixed.
5. Take small amounts of the dough and roll into small balls. Then flatten the balls between your palms. Sandwich the two circles together with a small teaspoon of the refrigerated Nutella in the middle and place on a sheet of greaseproof paper on a baking tray. It’s not necessary to seal the edges totally.
6. When you have put all the cookies on the tray (this quantity should make between 6 and 12 cookies – we made 10 when we made them) place them on the oven at 180 degrees and cook for 6 – 12 minutes.
Be careful not to over-cook. You should be taking them out of the oven looking they might need 2 or 3 minutes more. If you decide they do need more put them back in the oven – but if you over-cook they will end up too hard.
