Easy Pea Soup
This soup is tasty and extremely easy to make. Serve with hot crusty bread and maybe some grated cheese on top. You could also add a dash of cream before serving. The soup is vegetarian (if you use vegetable stock) but can be vegan if you use oil instead of butter. It literally can be made and on the table in under 10 minutes.
Ingredients
1 small bag of frozen peas (or half a large bag of peas)
1 onion & 1 clove of garlic
1 vegetable or chicken stock cube & 1 pint of boiling water
Salt and pepper to taste
A few flakes of chilli (optional)
Method
1. Cook peas until al dente (avoid over cooking as it’s better to have them under rather than over-cooked)
2.While the peas are cooking boil the kettle and make 1 pint of stock with the stock cube.
3. Chop one medium to large onion fairly finely and one clove of garlic and sauté in a frying pan until soft with a teaspoon of oil or butter. Add a few chilli flakes if using.
4. Place the peas, onion & garlic and most of stock in a blender and blitz till smooth. Add rest of stock and place in a pan and bring to simmering but avoid boiling.
Serve in warmed bowls and enjoy!
