Traditional Pancake Recipe


Pancake recipe

English pancakes are easy to make and can be sweet or savoury. Traditionally made on “Pancake Day” or “Shrove Tuesday”, the day before Ash Wednesday, they were a way of using up leftovers in preparation for the traditional Lent fast before Easter. Nowadays they can be made anytime and are easy and delicious.

Easy Pancake Recipe


120 grams plain flour

220mls milk plus 80mls milk mixed together in a jug

a pinch of salt

2 large eggs

50g butter

caster sugar

lemons for lemon juice


small to medium frying pan

kitchen paper & a ladle or small glass


1. Sieve the flour into a large bowl. Add the pinch of salt.

2. Break the eggs into the centre of the flour and beat together using an electric whisk (or normal balloon whisk). As it thickens gradually add small amounts of the milk and water until you have used up all the liquid. There is no need to let the mixture “rest” so feel free to make the pancakes straight away.

3. Melt all the butter in the pan then add 2 tablespoons of the melted butter to the batter to enrich it and whisk it in.

4. Place the rest of the butter into a small bowl and use it to grease your frying pan (using a small piece of kitchen paper each time to grease)

5. Heat the pan till it’s very hot, then turn the heat down to medium.

6. Use a small glass or ladle and fill it with the batter and pour into the pan tilting to make sure it is evenly covered but that the pan is thinly coated. Once the first side is cooked (usually a minute or so) flip it over (use a palette knife if you need) and cook the other side.

7. Stack the pancakes on top of each other on a warmed plate. You should make around 12 to 16 pancakes with this mixture. The first pancake is never great – but the pancakes improve the more you make!

8. Serve the pancakes sprinkled with caster sugar and freshly squeezed lemon juice or any filling of your choice.
