Recipe for Basque Style Chicken Casserole
Ingredients
Serves 4
4 x large chicken thighs
olive oil
1 orange – peeled and cut into segments
2 x large onions roughly chopped
150g shallots (peeled)
4 x large cloves of garlic
3 x large red peppers (cored and in slices )
150g chorizo cut into small strips
20 x black olives
1 teaspoon fresh or dried thyme (or provencale herbs also work well)
750ml chicken stock
Salt and pepper
1.5 – 2 teaspoons hot paprika
Steamed rice to serve
Method
- In a large frying pan fry the chicken thighs in a little olive oil until nice browned on both sides. Place in a large oven proof casserole dish.
- Fry the onion and garlic and shallots till soft (not browned) and place in casserole on top of chicken.
- Fry (sliced) peppers and chorizo and continue cooking until peppers softened and place in casserole .
- Add stock, paprika, herbs, tomato concentrate, olives and chorizo.
- Place in pre-heated oven at 180 degrees for 1 hour – 1.5 hours until tender.
- Serve with steamed rice and or steamed spinach.
