Refreshing Gin & Tonic Ice Lollies
Ice Lollies With A Kick!
When it’s hot and sunny and you fancy something really cold, how about a refreshing Gin & Tonic ice lolly? Easy to make and perfect for surprising friends, you just need to make sure to prepare them at least 4 hours in advance. It’s a good idea to make them the night before just in case!
This recipe makes 6 Gin & Tonic Ice Lollies and you will need a 6 Ice Lolly Mould which you can buy from all good supermarkets or department stores.
Ingredients
75ml gin
250ml tonic
50g caster sugar
- Place one slice of cucumber and one mint leaf into each of the 6 ice lolly moulds.
- Place the gin, tonic and sugar in a large jug and mix until the sugar is all dissolved. If possible use caster sugar but ordinary sugar will work too, you just need to stir it for longer.
- Divide the mixture between the moulds and pop the lolly stick tops on and freeze for 4 hours or overnight.
- To serve, gently take them out of the mould by popping them into a mug of hot water and then place them on a serving bowl of ice cubes and decorate with slices of lemon.
