The Perfect Lentil Daal

Vegan / Vegetarian Recipe

Serves 2 – 3

The Perfect Lentil Daal

This daal was served to me recently by friends and I loved it so much I asked for the recipe. Here it is:


  • 1 chopped medium onion
  • 1 chopped small hot chilli
  • 2 chopped cloves garlic
  • ½ cup peanut oil (or other vegetable oil)
  • 1 teaspoon cumin
  • 1/4 teaspoon turmeric
  • 1 teaspoon coriander
  • 1/8 teaspoon ground cardamom
  • ¼ teaspoon cayenne
  • 1 inch fresh chopped ginger
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup red lentils
  • 4¼ cups vegetable stock (or as much as you feel it needs)


  1. Heat a generous amount of oil in a small pan and fry the onion, garlic and chilli.
  2. Allow the mixture simmer a little, then add the cumin, turmeric, coriander, cardamon, cayenne, ginger and salt and pepper.
  3. Add the lentils and stir. Now cover the lentils with some of the vegetable stock and allow to simmer.
  4. Let the liquid cook down, topping up with stock to achieve the consistency you like. Stir regularly to make sure the lentils cook evenly.
  5. Simmer for at least 45 minutes then transfer to a blender. Blend for a few seconds to achieve a good consistency.

Serve with naan bread or rice.
