Tomato, Feta and Basil Salad

This is a super simply but really tasty Summer salad. The key thing is to be generous with the basil and to make it more visually appealing use different coloured cherry tomatoes. It’s vegetarian – but of course you can add anything you would like to it to make it more substantial, eg chicken pieces, prawns, meat etc.

Ingredients

225g mixed cherry tomatoes (use a variety of colours if you can)
2 tbsp good quality olive oil
1 tsp red wine vinegar
100g feta, cut into small cubes
A generous couple of handfuls of basil leaves

Black pepper and salt to season

Method

  1. Cut the tomatoes in half and place in a bowl.
  2. Cover with the olive oil and vinegar and season with salt and freshly ground black pepper. Leave for 10 – 15 minutes.
  3. Mix the feta through the tomatoes then place on a dish.
  4. Decorate with fresh basil leaves and serve.
