Recipe for Vegan Banana Pancakes

Vegan Banana Pancakes

Whether it’s for Sunday brunch, Shrove Tuesday or just anytime that you fancy pancakes, here is an easy recipe to make Vegan Banana Pancakes.

Ingredients

1 banana mashed up

1 tbsp sunflower oil, plus a little extra for greasing the pan

1 tsp lemon juice

100g sieved plain flour

½ tsp baking powder

250ml soya milk

(Optional: ½ tsp ground cinnamon)

To serve: maple syrup, honey, blueberries, ice cream – or whatever you prefer.

Method

  1. In a bowl, mix together the mashed banana, oil, lemon juice (and cinnamon if using).
  2. Next sieve the flour and baking powder into the bowl.
  3. Now stir in the soya milk creating a thin to medium batter.
  4. Grease a small frying pan lightly and place it on a medium heat.
  5. Using a ladle, spoon the batter into the pan spreading all the way around. Please note if you prefer making smaller pancakes use a round metal mould – or simply use less mixture. It may not be a perfectly round this way – but will still taste good!
  6. As soon as the mixture starts to pop with bubbles and the surface turns from glossy to matt,  flip over. Continue cooking on the other side for a couple more minutes.
  7. Continue making pancakes until all the batter is used up. Serve hot with maple syrup, honey and or blueberries and ice cream.

Tip: Use a hot plate for stacking the pancakes on to keep them warm – or keep them in the oven and cover with a slightly damp tea towel.
