Culinary Coffee Pairing
The Mövenpick 20/20 Restaurant is just a few steps away from Bahnhofstrasse in the heart of Zurich. Although I’ve often eaten in the wine bar downstairs, the other week I was invited to the 20/20 restaurant upstairs for the very first time and enjoyed a truly wonderful meal!
With its ornate windows and wooden clad walls it really is a very special room and an ideal location for functions, business events or birthday parties.

Chef David Klocksin (14 points Gault Millau) really excelled himself with this lunch. The delicate flavours, beautiful presentation and perfect portion sizes made it a really memorable experience. It was all just perfectly balanced and tasted amazing. Which makes it even more special when I tell you that the menu had been specially prepared to demonstrate coffee pairing.

From the welcome cocktail all the way through to the dessert, coffee had been used to work with the ingredients to gently enhance their natural flavours – just like you use salt or a spice.

In fact the brewing bartender, Timon Kaufmann from Mövenpick explained to us which coffees had been selected to marry with each course and told us about the different intensity of each particular type of bean, how and where it was cultivated and we were even given the recipe for a wonderful coffee cocktail.
Our starter was a very delicious Ora Salmon with a fragrant and fruity sauce with Mandarin & Yuzu infused in coffee oil.
The Guatemalan beans in the sauce could hardly be detected but gave the dish an extra depth.
The main course was veal shank served with parsnip and potato and the meat had been braised for 24 hours. Not only was it fabulously tender but the potato served with it was deliciously crispy on the outside and creamy on the inside and the coffee infused jus contained The Celestical arabica coffee.
It was truly wonderful and as I looked around I noticed that everyone’s plate was scraped clean. Nobody wanted to waste a morsel!
Dessert was delicate, light and full of flavour. It was an Espresso Cannoli served with latte sorbet and caramel ice cream and just melted in the mouth.
The Staatskellerei Zurich Wines
The two wines which accompanied the meal also deserve a mention and not only were they local wines from the Staatskellerei Zurich but they were really impressive. The white wine was the EO Blanc vintage 2016 and red was the EO Noir vintage 2014. Both are great wines which you can find out more about here.
